Peanut Butter, Banana and Chocolate 'Chunky Monkey' Cookies

  • 2 large or 4 small bananas
  • 2 tablespoons peanut butter
  • 80g (1 cup) rolled oats
  • 1 scoop (30g) vanilla protein powder
  • ¼ cup chocolate chips or cacao nibs
  • ½ cup flaked or chopped almonds
  • Pinch of salt
  1. Pre-heat the oven to 180ºC/350ºF and line a baking tray with baking paper.
  2. Peel the bananas, add them to a bowl, and mash them with a fork or potato masher until smooth.
  3. Mix in the peanut butter until it’s fully combined and not lumpy. Stir in the remaining ingredients.
  4. Spoon roughly one tablespoon of each mixture into the lined baking sheet. That makes one cookie, so repeat until there is no more batter left.
  5. Use the back of a spoon to shape them into nice little circles, decorate with some chopped bananas, if desired, and then bake for 10-12 minutes.
  6. Remove from the oven and let cool.
