Vegan Banana Bread Loaf

- 3 large bananas
- 2 tablespoons coconut or demerera sugar
- 3 tablespoons maple syrup
- 60ml (1/4 cup) coconut oil, melted
- 60ml (1/4 cup) almond milk
- 2 teaspoons cinnamon
- 1 teaspoon vanilla powder or extract
- 1 tablespoon flax meal plus 3 tablespoons water, set for 10 minutes
- 100g (1 heaped cup) almond flour
- 50g (1/2 cup) buckwheat flour
- 1 teaspoon baking soda
- Optional add ins: pecans, walnuts, raisins, cacao nibs or chocolate chips.
- Preheat oven to 185ºC/365ºF and lightly grease or line a load tin with baking paper.
- Peel your bananas, add to a large bowl and mash with a fork until smooth.
- Mix in the next 7 ingredients until combined.
- Sift in the flours and baking powder and stir everything together until incorporated.
- Fold in any add-ins, if using, and pour into the loaf tin and bake for 45-60 minutes or until golden and cooked through.
- Remove from the oven, allow to cool, and carefully remove from the loaf tin.
- Slice and serve, dolloped with some delicious nut butter.
