Chunky Chilli Chocolate Granola

Serves: 3 cups
- 2 cups (185g) oats
- ½ cup (45g) almond flakes
- ½ cup walnuts, roughly chopped
- 2 tbsp chia seeds
- ½ tsp sea salt
- ½ cup coconut oil
- 1½ tbsp almond butter
- 1 tbsp almond milk
- 2-4 tsp chilli flakes (depending how hot you want it!)
- 1 tsp cinnamon
- 3 tbsp coconut sugar
- 2 tbsp cacao powder
- 3 tbsp molasses
- 1 tsp vanilla powder or extract
- Preheat your oven to 175ºC/350ºF.
- Toss together your oats, nuts, chia seeds, and salt in a large bowl and set aside.
- In a small saucepan, melt your coconut oil and almond butter over low heat. Whisk in remaining ingredients until smooth.
- Pour the delicious chocolate-y liquid into the bowl with the dry ingredients and mix until everything is fully coated.
- Spread the mixture onto a large baking tray, making sure to spread everything in an even layer.
- Bake for 20 minutes, remove from oven, and use a spatula to flip the granola in chunks.
- Place back in the oven for a further 10-15 minutes, until nicely toasted and your house smells like heaven.
- Remove from the oven and let cool completely.
- Once cool, break off chunks of the granola and store in an airtight container.
