Black Rice Beauty Bowl!

The combination of black rice with the tahini and tamari is magical, and this bowl is so full of amazing ingredients it really will make you glow! It's such an easy recipe, and you can make this as a week-day meal and just toss it together at work for a delicious and nutritious lunch!
Ingredients
  • 1 clove of garlic, minced
  • 1 cup black rice
  • 1 head of broccoli
  • 1 bag of snow peas
  • 3 tablespoons almonds
  • 1 nori sheet
  • ½ lemon, juiced
  • Tamari sauce, to serve
  • Tahini, to drizzle
Instructions
  1. In a medium saucepan, heat up 1 tablespoon of olive or macadamia oil and lightly fry your garlic for about 1 minute, then add your rice and stir together for about 30 seconds. Add 2½ cups of water, bring to a boil, then reduce to a simmer and cover. Cook for about 40-50 minutes, until tender but not mushy.
  2. Once the rice is done cooking, remove from the heat and drain any remaining water. Let sit, covered, for 10 minutes, while you prepare your veggies.
  3. In a steamer basket over boiling water, quickly steam your broccoli and snow peas for about 2-3 minutes, until tender and easily pierced with a fork.
  4. Toast your almonds by tossing them for a few minutes in a dry frying pan over medium-high heat, and set aside.
  5. I like to toast my nori sheet, so I use tongs and hold it over an open flame on my stove for a couple of seconds, as it toasts super quickly!
  6. To serve, fluff your black rice with a fork, toss the veggies with some tamari sauce and lemon juice, and serve them together with some toasted crushed nori, the toasted almonds, and a generous drizzle of tahini!
