This is the perfect quick breakfast or afternoon snack. Super tasty and super satisfying, this chia pot is just so full of goodness!
Ingredients
130g mixed berries, fresh or thawed frozen*
1 teaspoon fresh lime juice
4 tablespoons chia seeds
½ teaspoon vanilla powder
250ml coconut milk
1 tablespoon raw honey or maple syrup (optional)
Toppings
Chopped strawberries
Granola
Edible flowers
Fresh mint leaves
Instructions
The night before or a few hours before you want to enjoy your chia pot, simply mash your berries in a bowl with the lime juice until they become a puree. Stir in your chia seeds and vanilla powder, then pour in your coconut milk and mix everything until combined. Spoon into a glass jar, seal, and place in the fridge.
When you’re ready, add your favourite toppings and enjoy!

*I used a mix of blueberries, raspberries, blackberries, and strawberries!
