Wellness Wednesdays – Sweet Potato & Quinoa Patty (GF)

I love sinking my teeth into a big, juicy, meaty burger. I also love a good veggie one.

At Glastonbury, after much persuasion I managed to convince Matt to try a veggie burger. Trust me, to get a dedicated meat-eater such as my boyfriend to commit to none for a meal was a big feat, so you can imagine my excitement when he had a bite of my one and decided to get one for himself.

Now, he claims to have no recollection – I call it denial – of enjoying such burger. Luckily, when I whipped these babies up, he devoured them, and I got the proof I needed. Victorious!

Sweet Potato & Quinoa Patties via Teffy's Perks

These patties are full of goodness. The quinoa provides protein, twice the amount of fiber as many other grians, iron, and magnesium, while the sweet potato is rich the vitamins B6, C, and D. The nutritional yeast (which I’ve only now discovered) is also packed with protein and flavour. So not only does it taste good, it’s also great for your heart, hair, digestion, bones, and skin! 

To make 4 patties, you will need:

  • 3 small sweet potatoes, skin on & chopped
  • 1/2 red onion, chopped
  • 1/2 cup cooked quinoa
  • 1/2 cup nutritional yeast (I used this one)
  • handful of chopped coriander (cilantro)
  • handful of chopped parsley
  • 1 tsp of garlic powder
  • 1 tsp of smoked paprika
  • sprinkle of salt & pepper
  • 1 egg, lightly beaten

Throw your sweet potato and onions in a skillet and cook them on medium heat until potato is soft (around 12 minutes). Add in your spices and stir, transferring the contents to a bowl.

Add in quinoa, yeast, and herbs, mixing it all with a fork. When everything is well combined, add in your egg and mix until nice and moist (love that word. moist.).

Use your hands to make 4 patties. Heat a skillet (can be the same one you used) and cook the patties until golden-brown (around 4 minutes each side).

I enjoyed mine burger-style. Toast some pittas, slather with hummus, a few sprouts, and add your patties! If you’re gluten free, use gf pittas, or simply just add it to a salad.

Now, I know many have resolutions such as being healthier/getting fit/etc. I just hope none of you have entered a new and crazy fad diet, and that you do everything consciously. We have only one body, let’s not mistreat it!
