I remember when I was a kid my grandmother had her own little veggie garden.

It had everything from kale, to lettuce, any and all herbs, passionfruit, and most importantly, strawberries. Sometimes in the mornings I’d go peek at the bunnies who had come to pillage it all. It was super idyllic, and super fun to watch as kid. I, of course, refused to eat any of the leafy greens, but you didn’t have to tell me twice to tuck into a bowl of freshly picked strawberries, their red juiciness running down my chin. Bliss.

Not only does breakfast make me happy, but also the fact that spring is finally here, and most importantly it’s also spring strawberry season!

Sure, you can probably get them year-round if you live near a big supermarket, but now is the season where they’re at the juiciest and ripest and reddest. Mmmnm just thinking about them makes my mouth water, so I’ve teamed up with Seasonal Berries to bring you this Sweet Marinated Strawberries with Vanilla Overnight Oats recipe to celebrate these not-so-humble berries. Tuck in!

Sweet Marinated Strawberries with Vanilla Overnight Oats

Ingredients
Marinated Strawberries
  • 1 small punnet strawberries, sliced lengthways
  • 1 tablespoon maple syrup
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon vanilla powder or extract
For the Overnight Oats
  • ½ cup rolled oats
  • ½ cup milk of choice
  • 1 teaspoon vanilla powder or extract
Instructions
  1. Make your marinated strawberries by mixing together all the ingredients in a bowl. Cover and place in the fridge.
  2. Next, prep the overnight oats by mixing all the ingredients in a jar or bowl, and again cover and place in the fridge for at least 4 hours.
  3. Once ready to eat, top the overnight oats with the marinated strawberries and any extra desired toppings and enjoy!
