Spicy Cajun Salmon Bowl

On today’s instalment of bowls of food that I love, I bring you a spicy cajun salmon bowl!

Throwing food into a bowl and making a lip-smacking meal out of it is what I live for, I just love how unassuming ingredients can come together so deliciously. Of course the actual use of a bowl is totally optional, though I am forever a bowl girl over plates – especially as it makes scooping up the foods into the fork a lot easier 😉

This meal was actually a result of my weekly meal prep, meaning that it took but minutes to throw together and meant I had a delicious dinner option in under 15 minutes – or you can pack it for lunch al desko, as I do love it cold as well. Weird? I don’t think so.

Serves: 2
Ingredients
Cajun Salmon
  • 2 salmon fillets
  • ½ tablespoon olive oil
  • 1 teaspoon chilli paste
  • ½ teaspoon cajun spice
  • Half a lemon, juiced
Tahini Black Beans
  • 2 cloves garlic
  • ½ small white onion
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cumin
  • 1 can black beans, drained and rinsed
  • Handful cherry tomatoes, quartered
  • 1 tablespoon tahini
  • Butter or ghee, to cook
To Serve
  • Brown Rice
  • Tahini
  • Greens and veggies
Instructions
  1. Preheat the oven to 175ºC | 350ºF. Wash and pat dry the salmon fillets, then lay them in a baking tray.
  2. Mix the remainging ingredients together and brush over two salmon fillets.
  3. Bake for 10-12 minutes until cooked through. Make the beans while salmon cooks.
  4. Sauté the onion and garlic in the butter or ghee over medium heat, stirring frequently, until softened. Stir in the spices and cook for a further minute.
  5. Mix in the beans and tomatoes and continue to heat, stirring frequently so it does not burn.
  6. Remove from the heat and stir through the tahini.
  7. Serve the cooked salmon with the beans, a side of brown rice, veggies, and a squeeze of lemon of lime.
