Peanut Butter and Strawberry Jam Shake (Vegan + GF)

I didn’t grow up on peanut butter and jam sandwiches, but I remember watching countless movies, tv shows, and cartoons where the kids would go off to school carrying a brown paper bag with a lovingly prepared pb&j sandwich.

Thats kinda what I wanted to recreate here – a yummy peanut butter and jam shake that tastes like your mother might have made it for you when she wanted you to feel better. It’s supposed to take you back to your younger years, and make you feel almost naughty for having something so simple yet so yummy. I know it’s a lot of weight to put on a simple shake’s shoulders, but I think it can handle it.

Like with any peanut butter and jam combo, I wanted it to be quick, easy, and somewhat effortless, and the notion of having to make my own jam didn’t quite fit in this particular moment. If you have some amazing, sugar-free jam lying about then by all means use it. I didn’t, so I took the speedy way and mashed some strawberries with chia seeds. 5 minute cheats jam!

So this shake is dairy-free, but it’s so creamy and yummy that you won’t miss the ice cream at all! It won’t leave you feeling sluggish or upset your tummy but actually keep you feeling full and satisfied (and happy cuz it tastes awesome!)

A super simply and super quick shake recipe that takes us back to a well loved combo. We health it up by making the peanut butter and jam into a shake instead of a sandwich, and it tastes oh so good!

Ingredients
For the Peanut Butter Layer
  • 1 cup (250ml) almond milk
  • ½ cup (125mll) quinoa flakes (oats would work as well)
  • 2 tbsp peanut butter
  • 1 tsp vanilla bean powder
  • ½ banana, frozen
For the Strawberry Layer
  • 5 large strawberries, de-stemmed
  • 1 tbsp chia seeds
  • 4 tbsp water
Instructions
  1. Start by making your strawberry layer. Simply mix the chia seeds with the water and set aside so it can become a gel, about 5 minutes. In the meantime, crush your strawberries with a fork in a small bowl.
  2. When the chia seeds have become a gel add them to the strawberry bowl and mix everything together. Add to the bottom of a glass or mason jar.
  3. Make your peanut butter layer by adding all the ingredients to a blender and mixing until smooth and creamy, about 1 minute.
  4. Carefully pour your peanut butter mixture into the glass/jar containing the crushed strawberry chia, use a straw to slightly mix the two, and enjoy!
Notes
PEANUT BUTTER - make sure you buy pure and organic peanut butter, without any added oil or nasties.

VANILLA - If subbing, use 1 teaspoon vanilla extract or the seeds from 1 whole vanilla stalk.

NUT-FREE - use sunflower seed butter instead of the peanut butter.
