Overnight Oats & Chia Seed Breakfast Pot

I love overnight oats. I love how simple they are, I love how it means I wake up to a ready-made breakfast, and I just love how truly tasty they are.

Especially now that it’s spring, my breakfasts and snacks start getting colder and the porridge starts getting shelved in favoured of the overnight oats. Of course, London is yet to receive the Spring Equinox memo, but my dreams of warm sunny days are closer and closer to being a reality.

If you’ve ever had bircher muesli, then overnight oats won’t be such a leap. It basically involves soaking the oats in a liquid so that you don’t have to hover over the stove while they cook. It’s brilliant, really. In this recipe we’re adding some protein powder to give it that much desired protein boost. Oh, and we’re also throwing in some chocolate for good measure because all mornings should start with chocolate.

Serves: 1
Ingredients
  • 1 x sachet Chocolate Multitasker from MissFits Nutrition
  • 1 cup | 250ml almond milk
  • 2 tablespoons blanched hazelnuts*
  • 1 date, pitted
  • 1 tablespoon cacao powder
  • ¼ teaspoon cinnamon
  • 2 tablespoons chia seeds
  • 4 tablespoons rolled oats
  • Dark chocolate chunks and blueberries, for serving
Instructions
  1. Blend the protein, almond milk, hazelnuts, date, cacao powder and cinnamon in a blender until smooth and creamy.
  2. Pour into a glass pot and stir in the chia seeds and oats until mixed through.
  3. Refrigerate overnight, give a quick stir before eating, and top with the dark chocolate chunks blueberries!
Notes
If you don't have a powerful blender, I recommend soaking the hazelnuts the almond milk for 10 minutes to soften them.
