It’s May now and officially spring, but the air still has some chill to it and I haven’t been able to bust out my summer dresses just yet. I can barely wait to be able to leave the house without having to bring a scarf with me!

There are a few benefits to this weather though. Being warm and cosy under a blanket, the fresh air as you leave your home in the morning and an endless possibility in the realm of baked goods – freshly baked banana bread is king in that category if you ask me.

This banana bread loaf is deliciously moist without being too dense, and there is a hint of cinnamon that pairs perfectly with the sweetness of the banana. Plus, the fact that you can make it all in one bowl is awesome, because who wants to be stuck doing loads of dishes when there is a vegan banana bread to be devoured?

It’s truly delicious as is, but I do love having this slathered in almond butter, just to add that extra decadence. Life’s too short to not slather almond butter in everything.

Vegan Banana Bread Loaf

Ingredients
  • 3 large bananas
  • 2 tablespoons coconut or demerera sugar
  • 3 tablespoons maple syrup
  • 60ml (1/4 cup) coconut oil, melted
  • 60ml (1/4 cup) almond milk
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla powder or extract
  • 1 tablespoon flax meal plus 3 tablespoons water, set for 10 minutes
  • 100g (1 heaped cup) almond flour
  • 50g (1/2 cup) buckwheat flour
  • 1 teaspoon baking soda
  • Optional add ins: pecans, walnuts, raisins, cacao nibs or chocolate chips.
Instructions
  1. Preheat oven to 185ºC/365ºF and lightly grease or line a load tin with baking paper.
  2. Peel your bananas, add to a large bowl and mash with a fork until smooth.
  3. Mix in the next 7 ingredients until combined.
  4. Sift in the flours and baking powder and stir everything together until incorporated.
  5. Fold in any add-ins, if using, and pour into the loaf tin and bake for 45-60 minutes or until golden and cooked through.
  6. Remove from the oven, allow to cool, and carefully remove from the loaf tin.
  7. Slice and serve, dolloped with some delicious nut butter.
