Morning Glory Savoury Sweet Potato Waffles

Morning Glory Savoury Sweet Potato Waffles | Gluten free waffles topped with black beans, avocado, and a fried egg | Healthy protein breakfast made simple and delicious!

So sweet potato waffles happened in my kitchen, which makes my waffle iron my all-time favourite purchase this year.

I’ve been going on about how I’ve wanted one for ages, and it was about time I actually got one. It was just one of those things that since it wasn’t a pressing matter it just got pushed back to the bottom of the list, ya know? But I was oh so mistaken guys. A waffle iron was absolutely essential, as are these sweet potato waffles. Essential for my happiness and for getting me out of bed, especially now that the air has a certain chill about it that just screams that winter is coming.

If you’ve never made sweet potato waffles, I beg you to make them as soon as possible. Go grab your waffle iron.

Go ahead, I’ll wait.

Honestly, these sweet potato waffles need to be made, you need to try them and tell me how much you love them like I do. They’re my new brunch favourite, especially when I’m after a savoury start to my day and don’t feel like having scrambled eggs or savoury oats. If you are in the mood for something sweet though, I thoroughly recommend my matcha waffles!

I use the VonShef waffle iron that I got from Amazon (UK | US) and find it super easy to use and clean, so I most definitely recommend it!

  • I have only made savory waffles once, but loved everything about them! Now time to create them again with your recipe! I love avo and eggs on top!

Hi Teffy, these waffles look great and very hearty and healthy. I love polenta myself, a lot. But I’m also thinking that maybe it can help hold the waffle mix together better, too even? The fried egg on top is a delicious idea .. wow 🙂

    • Hi Ana! Thank you, I do love these waffles. The polenta does help in that it is a flour, but it is gluten free so it doesn’t act as much as a binder as normal flour would =) xx

Hi Teffy, I like these waffles too (so much)… and I bookmarked them to make this totally awesome recipe =)
