Mermaid Blueberry Paleo Pancakes

Paleo Blueberry Mermaid Pancakes - gluten free pancakes with vegan pancake option! Beautiful and mermaid blue!

If you’re used to scrolling through Instagram for a daily dose of #foodporn, it’s more likely than not that you’ve come across mermaid toast, bowls, unicorn toast, and the likes.

Now, I don’t always give in to such trends, but I just couldn’t resits making blue pancakes! They’re just so much more fun than regular pancakes, and I can’t imagine anyone finding them boring. If Ariel from The Little Mermaid ever had pancakes for breakfast, these are the ones she’d have. No doubt.

These mermaid blueberry paleo pancakes are:

  • gluten & grain free
  • have no added sugar
  • high protein
  • vegan friendly
  • mermaid blue!

I used blue spirulina to make these, but I’m sure you could use blue magik or blue matcha powder as well!

Recipe type: Dairy Free, Gluten Free, Paleo, Vegan Option
Cuisine: Breakfast, Brunch
Serves: 10-12 mini pancakes
Ingredients
  • 400ml milk of choice
  • 1 egg or 1 chia egg
  • ½ teaspoon apple cider vinegar
  • 35g vanilla protein powder (I used a pea protein)
  • 35g coconut flour
  • 35g tapioca starch or arrowroot
  • ½ teaspoon baking soda
  • 3 teaspoons blue spirulina powder
  • ½ teaspoon cinnamon
  • 1 punnet of blueberries
Toppings
  • Granola
  • Blueberries and kiwis
  • Almond butter
  • Yogurt (I use an almond based one)
Instructions
  1. Add all of the ingredients, except for the blueberries, into a blender and blend until combined.
  2. Heat a skillet over medium heat and lightly grease with some coconut oil.
  3. Pour about 2-3 tablespoons of the batter (I like to use an ice cream scoop) onto the heated skillet and dot with 3-4 blueberries. Note - the bigger the skillet, the more pancakes you can fit. I usually fit 3-4 in mine.
  4. Cook for 2-3 minutes, carefully flip, and cook for another 1-2 minutes. Remove onto a plate and continue until all the batter has been used.
  5. Serve with any and all desired toppings!
