My mornings are a constant battle between being lazy and wanting something special for breakfast.

The lazy side is usually the dominant side, and if I’m not careful I will end up eating a delicious but non-changing breakfast of avocado toast. A winning meal on its own, but a girl can only have so much.

One of my lazy staples is overnight oats. Toss some oats with water and lemon juice the night before and top with crunchies, creamies, and yummies the next day. Job done. I’ll usually go for almond butter as my creamy, but I needed more. I was restless. After a long holiday in India, I needed something bright. I needed mango.

This mango lassi overnight oat is the perfect combination of lazy and special, and is the perfect solution to my morning dilemma.

Mango Lassi Overnight Oats

Ingredients
  • 200g (2 cups) rolled oats
  • ½ lemon, juiced
  • 1 mango
  • 60ml (1/4 cup) water or almond milk
  • 60ml (1/4 cup) coconut or natural yoghurt
  • 1-2 tablespoons maple syrup, if desired
  • Pinch sea salt
  • Pinch of ground cardamom
  • Tiniest pinch of turmeric
Instructions
  1. Place your oats in a medium bowl with 2 cups water and the lemon juice. Cover and set aside on your kitchen counter overnight.
  2. In the morning, peel and chop your mango flesh and add to a blender with the remaining ingredients.
  3. Blend until smooth, taste test and adjust sweetness, and mix into the bowl with the oats, reserving some of the mango cream to spoon on top.
  4. Divide into 4 small jars or bowls and spoon the remaining mango cream on top.
  5. Top with some blueberries and crunchy buckwheat, if desired. Enjoy immediately or keep in the fridge for weekday breakfast.
