6-Ingredient Granola Breakfast Vegan Cookies

That cookies are my ultimate favourite dessert/sweet thing everybody knows. All you have to do is utter the word cookie and my face honestly lights up. Do you remember Angelica from Rugrats? Yea, I’m basically a grown up version of her cookie-loving self.

Now, these are not those decadent, chewy triple chocolate cookies (I’ve got a low carb cookie here and a vegan cookie version here, if you do want those). These are the breakfast cookie kind, where it leaves you feeling smug and satisfied with your breakfast choice. I made these for my mum the to enjoy with her morning coffee as she had pretty bad breakfast habits and is definitely NOT the kind of person to go out of her way to make an elaborate breakfast. Bread and butter is usually her jam.

I love adding protein powder to things. It’s an easy way to bump up the protein content and also it adds a delicious sweet vanilla flavour. One of my faves is MissFits Nutrition (get £5 off with TEFFY5) in vegan pea. It doesn’t make the cookies grainy or “sandy” and is not sickly sweet either as there is no artificial ingredients. When buying protein powder friends, make sure you’re getting a natural one with no sucralose.

Ingredients
  • 2 bananas
  • 8 tablespoons coconut butter
  • 1 tablespoon chia seeds
  • 25g vanilla protein powder
  • ¼ teaspoon cinnamon
  • 1⅓ cup granola
Instructions
  1. Preheat the oven to 175ºC | 350ºF and line or lightly grease a baking tray.
  2. Peel your bananas and either place in a food processor or mash with a fork until smooth.
  3. Stir/blend in the coconut butter until combined, then the remaining ingredients until batter is smooth.
  4. Stir in granola then dollop about 1 tablespoon of the mixture onto the tray to make a cookie, repeating until all the batter is used.
  5. Lightly flatten the top (a wet spoon helps) and bake for 25-50 minutes or until golden brown on top.
  6. Let cool before removing and enjoy!
