Chocolate Chai Mini Banana Bread

- 3 medium ripe bananas
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- 1 large egg or 1 flax egg (1 tbsp ground flax + 3 tbsp water)
- 2 tablespoons melted coconut oil
- ½ cup low fat greek yoghurt (sub coconut yoghurt for vegan)
- 1 cup flour (any flour of choice)
- 1 scoop or sachet MissFits Nutrition Chocolate Protein
- 3 tablespoons cacao powder
- 1 teaspoon baking soda
- 3 teaspoons chai spice
- ¼ cup walnuts, chopped
- Preheat oven to 175ÂșC and lightly grease a 12-hole muffin or brownie tin.
- Mash bananas in a large bowl, then stir in the remaining wet ingredients together until well combined.
- Add dry ingredients to the bowl and mix until combined. Divide batter evenly among the 12 cups. Note - an ice cream scoop is very handy for this!
- Sprinkle walnut pieces on top and lightly push down.
- Bake for 25-28 minutes or until tester or toothpick comes out clean.
- Remove from tin, let cool and enjoy!
