Healthy Toast - 3 Delicious Ways!

- 1 slice of toast (for each)
- ½ avocado
- Squeeze of lime juice
- Pinch of salt & pepper
- 3 tablespoons cannelini beans
- Sprinkle of black sesame seeds & chilli flakes
- 3 tablespoons coconut yogurt (or yogurt of choice)
- 1 tablespoon maple syrup
- ½ teaspoon pitaya powder
- ½ teaspoon blue spirulina
- 1 tablespoon almond butter
- 2 tablespoons light (hulled) tahini
- ½ banana
- Sprinkle of coconut flakes and crunchy buckwheat (can sub for pecan pieces)
- Drizzle of maple syrup or honey (optional)
- Mash the avocado with the lime juice, salt & pepper.
- Stir in the cannelini beans, lightly mashing them as well.
- Serve on the toast sprinkles with the black sesame seeds and chilli flakes.
- Stir together the yogurt and maple syrup and divide into two small bowls.
- Whisk each powder into each bowl so you end up with a blue and a pink.
- Spread the almond butter over the toast, and top with the colourful yogurt.
- Spread the tahini on the toast, top with slices of banana, coconut flakes, and crunchy buckwheat.
- Drizzle the maple or honey, if using.
