Lushbombs - Vegan & Paleo Energy Balls

- 8 dates, pitted
- 4 tablespoons coconut flour
- 1 scoop (30g) vanilla protein powder (I used a stevia sweetened one)
- 1 tablespoons chia seeds
- 4 tablespoons cacao butter, melted
- 3 tablespoons nut or seed butter
- 3-4 tablespoons activated buckwheat groats, whole nuts, or protein crispies
- Place all the ingredients except for the buckwheat/nuts/crispies into a food processor.
- Blend until fully combined, then throw in the remainging ingredient and pulse a few times until combined.
- Use your hands and roll into balls, placing on a lined plate or container.
- Place in the fridge for 5-10 minutes to set, then keep at room temperature in a sealed container.
