Add all of the ingredients, except for the blueberries, into a blender and blend until combined.
Heat a skillet over medium heat and lightly grease with some coconut oil.
Pour about 2-3 tablespoons of the batter (I like to use an ice cream scoop) onto the heated skillet and dot with 3-4 blueberries. Note - the bigger the skillet, the more pancakes you can fit. I usually fit 3-4 in mine.
Cook for 2-3 minutes, carefully flip, and cook for another 1-2 minutes. Remove onto a plate and continue until all the batter has been used.
Serve with any and all desired toppings!
