Toss your nuts and salt together and place your nuts in a preheated at 160ºC / 320ºF and roast for about 10-15 minutes, tossing once halfway though.
Let nuts cool for a few minutes then add to a food processor and blitz on high for 15-20 minutes, scraping along the sides as you go. Add your cinnamon once it starts to resemble a flour.
At first it won’t seem like it’ll become a butter, but keep going! It goes from resembling a nut flour, to a stickier paste, to a creamy nut butter, all it takes it patience.
It is done when all creamy and smooth. Taste and adjust salt and cinnamon, then transfer to a jar. Will last about 5 days at room temperature, or a few weeks in the fridge.
