These cookie dough bliss balls are it. Honestly, so so delicious, and it doesn’t get more simple than 3 ingredients!

You get an amazing sweetness and caramel-like flavour from the dates, that pairs up perfectly with the slightly bitter cacao nibs. That way the bites are not overly sweet but still taste like a naughty little treat! The cashews work as the perfect base, as they have quite a neutral flavour and really showcase the dates and cacao nibs.

I make batches of these cookie dough bliss balls and store them in the fridge for easy snacks throughout the week.

It definitely makes snacking more fun when it’s a yummy treat that won’t make my blood sugars spike and leave me feeling lethargic afterwards. The hardest part for me is stopping after just one! I’d try leaving them out of sight so you’re not tempted to have one every time you open the fridge – maybe in the bottom shelf? Or they could even be in the freezer, but I do prefer them in fridge temperature.

3-Ingredient Cookie Dough Bliss Balls (GF + Vegan)
 
My favourite bliss balls to date! You get an amazing sweetness and caramel-like flavour from the dates, that pairs up perfectly with the slightly bitter cacao nibs. That way the bites are not overly sweet but still taste like a naughty little treat!

Ingredients
  • 130 g (1 cup) cashews
  • 12 medjool dates, pitted
  • 40 g (1/4 cup) cacao nibs
Instructions
  1. Add the cashews to a food processor and blend them until they become almost like a flour. Be careful not too over-blend so we don’t end up with cashew butter!
  2. Add in your pitted dates and blend again until they form a crumbly and clumpy mixture, about 1-2 minutes on high. Add your cacao nibs, quickly pulse just to mix them in.
  3. Lightly wet your hands and scoop out 1 tablespoon of the mixture onto your palms. Roll into a ball and repeat until you’ve used up all the mixture.
  4. Store in a container in the fridge. Should keep for a couple weeks.
Notes
CACAO NIBS - Can sub for chocolate chips. Just make sure you get dark chocolate and vegan, if needed.

CASHEWS - I haven't tried it, but I'm sure macadamia nuts would work really well here as well!
