Coconut & Goji No-Bake Raw Cookies

I don’t think I could ever get tired of cookies.

I’ve always been more of a cookie than a cake girl. I remember when I first moved to London, and I was introduced to the word biscuit. In the UK, a biscuit is basically the crispier cookies, the ones that pair incredibly well with tea. So, if you’re reading this in London, these are more a biscuit, if you will.

Biscuit or cookie, I can promise you these are absolutely, incredibly delicious.

You get that amazing coconut flavour from the coconut oil, the coconut milk, and the delicious bits of shredded coconut throughout. We’re also using coconut sugar here, which actually has an incredible caramel-like flavour to it!

The goji berries dot the whole cookie/biscuit with colour, and not only give it a tartly sweet taste, but also boost it’s superfood goodness with its high antioxidant content. As far as a treat goes, this is a pretty good one!

They go perfectly with a cup of tea, especially a bitter one like green tea. Or even coffee, if you’re so inclined.

I made mine into stars and hearts, but you could do any shapes you wanted. I preferred the heart shape, but I’m sure something cool like cats or Darth Vader would work just as well!

Since they’re raw cookies, you also don’t have to worry about them losing shape!

I did originally intend to make some baked cookies/biscuits, but my trusty oven decided to be trusty no more and broke down on me, so I did what any cookie-lover would do – I ate them raw. Turns out, raw cookies are just as delicious!

Now, since I modified these to make them into raw cookies, I don’t know how they’d fare out being baked, but if you want to try, I’d love to know how they turn out!

Raw Coconut & Goji Cookies

Ingredients
  • ½ cup (70g) sorghum flour
  • ¼ cup (40g) almond flour
  • 1 tablespoon tapioca flour
  • 2 teaspoons psyllium husk powder
  • ½ teaspoon sea salt
  • ½ cup (55g) coconut sugar
  • 1 teaspoon vanilla powder
  • 1 cup shredded coconut
  • ¾ cup goji berries
  • ¼ cup (60ml) coconut oil, room temperature
  • 2 tablespoons coconut milk
Instructions
  1. In a medium bowl mix in your flours, psyllium husk, salt and baking soda. Beat together the coconut sugar, vanilla, coconut oil, and coconut milk until fully combined. Add to the flour bowl along with the shredded coconut and goji berries and mix until a soft, crumbly dough forms.
  2. Use your hands to make your dough into a ball, then roll it out between two sheets of baking parchment. Peel off the top baking sheet, and, using a cookie cutter shape of your choice, cut into shapes and place on lined baking trays. Gather and re-roll and press remaining dough and continue cutting until all is used.
  3. Place the baking trays with the cut cookies in the fridge or freezer until they’ve hardened, about 5-10 minutes in the freezer.
  4. Enjoy straight from the freezer!
Notes
STORAGE: I keep mine in the freezer, as it makes them even crunchier! They will go soft at room temperature, so try to keep them cool.

FLOURS: If you can’t find sorghum, buckwheat or oat flour would be good substitutions!
