Coconut & Cookie Dough Truly Low Carb Energy Bites | Sugar free, dairy free, refined sugar free, paleo and vegan!

These low carb bites are honestly my newest obsession – and I don’t say this lightly. I made a batch that was meant to last me two weeks and then I proceeded to eat 5 of them in a row! Not exactly my best moment, but they were just so delicious and I was so happy with them it needed to be done.

These bites are low carb, high protein and high fat (do not fear fats!) so they do keep you feeling satisfied for way longer than most of the dates-based energy bliss balls out there. No blood sugars spiking in my house, thank you very much! They have about 1g of net-carbs in them, while also having fibre for a happy tummy, and good fats and protein to keep you going. To sweeten I used stevia, which I personally really love, though if you wanted to use erythritol or monk fruit that’d be totally fine too – or if you choose to go the maple syrup route I won’t judge, just do keep in mind it will add sugar to your bites.

I’ve recently been transitioning to a more sugar-free life as it honestly wasn’t doing my body, skin or hair any favours, and these low carb bites have been amazing when I crave something easy and sweet that won’t spike my blood sugars and get me on that 4pm roller coaster of wanting carb-y snacks just to tie me over to dinner. With using stevia, they’re under 100 calories a bite so you could have 1-2 and stay happy!

Coconut & Cookie Dough Truly Low Carb Energy Bites

Ingredients
  • ⅔ cup almond flour
  • ¼ cup toasted desiccated coconut
  • ¼ cup powdered stevia or erythritol
  • 1 scoops (25g) protein powder of choice
  • ¼ cup Califia Farms Unsweetened Vanilla Almond Milk
  • 3 tablespoons coconut oil
  • 1 tablespoon nut or seed butter of choice (I used tahini)
  • Pinch of salt
  • ⅓ cup sugar-free or 100% dark chocolate chips
  • Melted dark chocolate, to dunk
Instructions
  1. Place all the ingredients (except chocolate chips) into a food processor and blitz until combined. Add in chocolate chips and pulse a few times to mix it in.
  2. Using your hands, roll 1 tablespoon of the mixture into a small ball and place on a lined container. Repeat until there is no mixture remainging, then place the mixture in the freezer for 10 minutes while you melt the chocolate.
  3. Remove the bites and dip one side (or all of it) into the chocolate and place back on the tray. Repeat with all the bites, and keep in the fridge or freezer so the chocolate can harden. Enjoy!
