Decadent Chocolate Chia Pudding (Vegan & GF)

There are times in life when all you need if chocolate. Plain and simple.

Nothing else will do. No substitutions, no tricks. Just chocolate. I identify all too well with that feeling, and there is nothing wrong with it! But it doesn’t mean that you need to reach straight away for a massive, store bought, artificial chocolate bar. There are options that are just as deliciously indulgent that won’t have so many nasties.

Have you guys heard of raw cacao? It’s the natural form of chocolate and I absolutely love it. It’s sweet without being sickly, and it’s got an intensity to it that I love. Not to mention the fact that it’s actually good for you! Yep. Chocolate that is good for you. It’s a great source for antioxidants, and we all know the happiness that chocolate gives us. Love ’em.

I added in some dark chocolate chips, because, well, I love the stuff! I have a 1kg bag of dark chocolate chips just lounging about in my kitchen. It’s perfect for just snacking on when I need a sweet hit. I’ll have it with nuts of chopped up fruit. So yummy. I’m also currently obsessing on pomegranate seeds. They can be a pain to remove from the fruit, but it’s oh so worth it. These little jewels are delicious and good for you. Double win!

Don’t even get me started on chia seeds! I love them. I eat them every day for breakfast. They’r an incredible source of fibre, protein, antioxidants, manganese. Basically they’re da bomb. And so so versatile. You can buy them at health food stores or online. They can be sprinkled, drunk, or made into a pudding! When mixed with liquids they puff up and become all gel-like. I even added them to my pancake batter here!

To make enough for one, you will need:

  • 1/4 cup chia seeds
  • 1/2 cup almond milk
  • 1 tsp vanilla extract
  • 1 tbsp raw cocoa
  • 1 tbsp dark chocolate chips or cacao nibs
  • 1/2 tbsp activated pistachios
  • 1/2 tbsp pomegranate seeds

 
In a ramekin, add your chia seeds, almond milk, vanilla extract and cocoa. Mix and place in the fridge. After 20 minutes, take it out and give it another swirl, just to make sure it’s all evenly mixed. Leave it in the fridge for a couple of hours to overnight – depending how long you can wait before digging in!

When you’re done waiting, take out of the fridge and add your toppings. Grab a spoon and enjoy!
