Guys, these are probably one of the tastiest banana breads I’ve ever made. They’re fluffy inside, with a hint of warming chai spices and a sweet banana flavour.

Banana bread is probably one of the easiest baking ventures you can undertake, so if you’re no baking maven, this recipe is for you. Ever find yourself looking at your bananas quickly and surely become spottier and spottier with each passing hour? You’re then confronted with two feasible choices – freeze ’em, or bake ’em. This time, I chose the latter and am oh-so-happy I did.

Ingredients
  • 3 medium ripe bananas,
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg or 1 flax egg (1 tbsp ground flax + 3 tbsp water)
  • 2 tablespoons melted coconut oil
  • ½ cup low fat greek yoghurt (sub coconut yoghurt for vegan)
  • 1 cup flour (any flour of choice)
  • 1 scoop chocolate protein powder
  • 3 tablespoons cacao powder
  • 1 teaspoon baking soda
  • 3 teaspoons chai spice
  • ¼ cup walnuts, chopped
Instructions
  1. Preheat oven to 175ºC | 350ºF and lightly grease a 12-hole muffin or brownie tin.
  2. Mash bananas in a large bowl, then stir in the remaining wet ingredients together until well combined.
  3. Add dry ingredients to the bowl and mix until combined. Divide batter evenly among the 12 cups. Note - an ice cream scoop is very handy for this!
  4. Sprinkle walnut pieces on top and lightly push down.
  5. Bake for 25-28 minutes or until tester or toothpick comes out clean.
  6. Remove from tin, let cool and enjoy!
