Blueberry & Lemon Snack Bars (Paleo & Vegan)

I’m not the biggest snacker. I rather have quite filling meals that keep me going for about 4-5 hours until the next one, but that doesn’t mean I don’t like to have snacks within reach just in case. I made these handy lil’ paleo and vegan bars to have as a snack or sweet treat when the craving hits, plus super easy to make and the lemon and bluebs combo is just on POINT.

They are:

Blueberry & Lemon Snack Bars (Paleo & Vegan)

Ingredients
  • ¼ cup coconut flour
  • ¼ cup almond flour
  • 3 scoops vanilla pea protein
  • zest from 1 unwaxed lemon
  • ½ cup cashew butter
  • 1 tablespoon maple syrup
  • 2 tablespoons coconut oil
  • ½ cup crunch factor - crispy buckwheat, chopped nuts, etc
  • 100g dried blueberries
Instructions
  1. Simply place all of the ingredients except for the bloobies and crunch factor (I used crispy buckwheat) in a food processor and blend until combined. Throw in the remainging and blitz just until evenly spread throughout the batter.
  2. Transfer to a lined baking tray and spread until about 1 inch (2.5cm) thick, smoothing out the top and edges with a spoon.
  3. Place in the fridge and let set for at least one hour. Cut into bars (mine made 12) and keep in an airtight contained in the fridge.
