Smoothie bowls seem to have completely taken over Instagram lately, it’s impossible to scroll through your feed without someone’s enviable creation popping up.

I find smoothie bowls to be perfect for when you can’t exactly decide what it is that you want. Smoothie? Porridge? Granola? With smoothie bowls, you can actually have all of the above without feeling like a greedy morning grinch. Or at least that’s what I tell myself when I’m pilling any and all the toppings onto my bowl.

I also love how quick it can be to whip up in the morning, I’ve made my Mango and Banana Smoothie Bowl many a times when I’ve had friends staying over. Effortless and impressive.

Ingredients
For the Bircher
  • 50g (1/2 cup) oats
  • 125ml (1/2 cup) almond milk
  • 1 tablespoon desiccated coconut
  • 2-3 chopped dried apricots, raisins, sultanas or dried dates
  • ¼ teaspoon cinnamon
  • Pinch of sea salt
For the Smoothie
  • ¾ cup frozen berries
  • ½ banana, frozen
  • ¾ cup almond milk
  • 1 tablespoon chia seeds
Instructions
  1. Make your bircher muesli by mixing all the ingredients in a jar or bowl and placing in the fridge for at least 4 hours or overnight.
  2. Make your smoothie by adding all the ingredients into a blender and blending until smooth and creamy.
  3. Serve smoothie in a bowl with your bircher and top with extra berries, chopped banana, cacao nibs and coconut chips, if desired.
