Almond & Peanut Butter Lushbombs | healthy paleo and vegan snack, high in protein and full of healthy fats!

I’m not a big snacker, but I still need to have snack-y options on hand should I crave one. It’s this mind thing where I need to feel like I’ve got healthy options on hand just in case, ya know? It can be as simple as having some nuts in the house, or more fun as having these lushbombs in the fridge. It just puts my snacking mind at ease.

Whenever I do reach for a snack I try and always make sure it’s got some good fats and a dose of protein to keep me from having more sweet cravings later on, and also keeps my blood sugar levels nice and levelled without spiking and crashing into a sugar-crazed frenzy. If you’ve been there, you know what I’m talking about!

Anyways, back to these little bites. I’ve seen so many recipes online that call for tons of dates, syrup, and coconut oil, and I don’t judge. I’ve made them before and they’re fucking delicious (so are these btw), but just not what my body wants or needs at that time with all the sugar. Not to mention coconut oil melts so easily at room temperature I wanted to try something a bit more stable, so we’re using cacao butter here which you can get from most health food stores or online – if you really can’t find it then coconut oil does the trick just fine, don’t sweat it.

The melted cacao butter just gives it a white chocolate-like taste and feel, and it almost seems like you’re tucking into a naughty bonbon that is almost too pretty to eat in its pink glory!

Ingredients
  • ⅔ cup (80g) almonds
  • 2 tablespoons peanut or almond butter
  • 2 scoops (12g) collagen peptides or protein powder
  • 1 tablespoon coconut flour
  • 3 tablespoons melted cacao butter
  • 2-3 drops vanilla stevia (optional)
  • Desiccated coconut and pitaya powder, to roll
Instructions
  1. Just throw the ingredients into your food processor, whizz it up, roll in the coconut and pitaya powder.
  2. Keep in the fridge or freezer. Easy!
